I'd recommend Georgia as a destination! It's ranked in the Lonely Planets top 20 destinations overall, (http://www.lonelyplanet.com/blog/2013/02/26/lonely-planet-travellers-choice-the-top-destinations-of-2013-part-1/) possibly because of the great reputation Georgians have for hospitality. I was rather wishing I'd booked a few more days to loiter a little longer in Tbilisi. (You could go to dumpling making classes!) Azerbaijan is pretty good too once you're in but the visa is ridiculously expensive, slow to be issued, you need a letter of invitation and everything is quite expensive. Georgia has no visa requirements and is pretty cheap once you get there.
